Poppy Seed & Mandarin
Turkey Salad
Baking/Nutrition Facts
Start to finish:
approx. 15 min.   Serves 4
  cup orange juice          1 tbsp. red wine vinegar
1 tsp. poppy seeds           1 tsp. olive oil
1 tsp. Dijon mustard          1/8 tsp. ground pepper
5 cups torn stemmed washed red leaf lettuce
2 cups torn stemmed washed spinach
lb. cooked turkey breast (honey roasted optional) cut  
    into inch julienne strips
1 can (10 ounce) mandarin oranges, drained
1.  In a small bowl, combine orange juice, vinegar, poppy seeds, oil, mustard and pepper.  Set aside.
2.  In large bowl toss together lettuce, spinach, turkey and oranges.
3.  Pour dressing over turkey mixture and serve immediately.  Serves 4

Sweet Potato Salad

Serves 4
Do something special for the kids during your busy week to let them know how much you love them.  Make something that has nothing to do with any event.  Try this!
3 tbsp. cider vinegar             2 tbsp. sweet pickle relish
2 tsp. Dijon mustard             tsp. salt (opt.)
cup Crisco Oil
1 lbs. cooked sweet potatoes or yams cubed
     (equals 2-3 medium potatoes)
tsp. freshly ground black pepper      
2 scallions or green onions, trimmed and thinly sliced
cup  finely chopped red bell pepper (optional)
1.  Warm cooked leftover potatoes or yams in
microwave on medium for about 5 minutes.
2.  Combine vinegar, relish, mustard, salt, and pepper in a container or jar with a tight fitting lid.  Shake well.  Add the oil.  Shake will.
3.  Toss warm potatoes or yams with dressing.  Add scallions and red pepper.   Serve 4
*Serve warm, a room temperature or chilled.  This salad can be made one day early and refrigerated, tightly covered with lid or plastic wrap.
Melon Pops
1. Peel, seed and slice cantaloupe honeydew and watermelon into long pieces about inch thick.
2.  Cut out fruit pieces with your favorite flower or animal shaped cutter.
3.  Insert a lollipop stick to make it a pop.
4.  Chill or freeze until ready to eat.

3 cups all purpose flour            2 tsp. baking soda
1 tsp. salt                              3 cups granulated sugar                        
4 large eggs                             1 cup vegetable oil
cup orange juice or water
1 tbsp. plus 2 tsp. pumpkin pie spice
1 cup sweetened dried, fresh or frozen cranberries
1 (15 oz) can Libby's 100% pure pumpkin
1.  Preheat oven to 35o degrees F.  Grease and flour two 9x5 inch loaf pans.
2.  Combine: flour, pumpkin pie spice, baking soda and salt in a large bowl.
3.  Combine: sugar, pumpkin, eggs, vegetable oil and juice in large mixer bowl.  Beat until just blended.
4.  Add pumpkin mixture to flour mixture; stir just until moistened.  Gently fold in cranberries.
5.  Spoon batter into prepared loaf pans.  Bake for 60-65 minutes or until wooden picks inserted in center comes out clean.  Cool in pans for 10 minutes, remove to wire racks to cool completely.  Makes 2 loaves.
